🌿 Refreshing Radish Salad
Ingredients:

2 cups peeled and thinly sliced daikon (Japanese white radish) or red radishes
(I used red radishes and it was still delicious!)

1 cup thinly sliced green apple, cut into half-moons

1/3 cup grated carrot

1/4 cup thinly sliced red onion, cut into half-moons

1 whole red radish, grated

1/4 cup freshly squeezed orange juice

2 tsp brown rice syrup (can sub agave or raw honey)

1 tsp freshly squeezed lime juice

1 tsp sea salt or Celtic salt

10 fresh mint leaves or cilantro (optional garnish)
Directions:

In a large bowl, combine the daikon (or red radishes), green apple, grated carrot, red onion, and grated red radish.

In a small bowl, whisk together the orange juice, brown rice syrup, lime juice, and salt until well mixed.
